Cashew & Capsicum Dip

Had enough of the over-prized and packaged supermarket dips?
Try this one, it's one of our favourites, great for on a sandwich or chicken wrap. Or on a rainy afternoon with some warm bread.
This is a recipe from my good friend Sanne. 

Cashew & Capsicum Dip
In a kitchen machine chop: 
1 clove of garlic
30g parmesan cheese

Then add:
100g sundried tomatoes, drained
1/2 large red capsicum
100g toasted cashews
20g balsamic vinegar
20g olive oil

Chop until it gets a nice crumbly consistency.

Keeps in the fridge for about a week, suitable for freezing.
