Dinner time

Dinner time for us is family time, to catch up and enjoy a meal together. Even Alex sits in most evenings for some laughs and a couple a spoons of mashed fruit. Soon he'll be getting a stick-blendered
version of our plates.
I don't make a big deal of the kids finishing their plate, they know when they are full.
With the exemption on Fridays or the occasional fruit or yoghurt, we don't have desserts. I don't cook separate meals, if they don't like something they don't have to eat it, no fuss, next meal is breakfast.
Might sound stern when you write it down like that, it's not, I like to enjoy our meal together. I'm not saying because of these rules our kids are easy eaters, but they do eat just about everything you put before them. That is other then boiled or mashed potatoes (?!?!?!) and Brussel Sprouts. They do love olives and can to be made eating potatoes by drowning them in a blue cheese sauce, don't ask me why.

Yesterdays dinner is another of my favourites, I like the simplicity of most Italian recipes, good quality ingredients do all the hard work for you.

Boil up a load of spaghetti. In a frying pan with a glug of good olive oil, fry up some diced onion. When it starts to glaze add some finely diced garlic. Add more olive oil and add some real good, fresh, sun-ripened, diced tomatoes on high heat and stir for a minute. Stir through some spicy diced salami as an optional.
Stir through the spaghetti. A little salt and pepper and you are done.
Serve with olives, roasted pine nuts, parmesan cheese on a bed of fresh basil leaves and a couple of shredded rocket leaves.

Now I better get of my bum and get a fire and some dinner going, stir fry tonight, another quick one.
