Munchies

Looking for a tasty snack? Try roasting some parsnip!
Yep that is a vegetable, one of those old fashioned ones.

Cut in thin slices, no need to peel, just trim the end of like you would so with a carrot
Spread on a baking tray in a single layer.
A little sprinkling of sea salt
Two table spoons of coconut oil spooned over

In the oven at 220C.
Flipping after 10 minutes
15-20 minutes should do the trick, depending on your oven and amount of trays using.
You want them little browned and crispy.

I snuck mine in as a side dish, I also often mix them up with sweet potato.
Make plenty, they shrink, disappear and are lovely as a leftover.

  1. I've only tried parsnips once and the response from the family wasn't very positive. Maybe this is a tastier way to cook them. Sweet potatoes chips are a favourite with most here.
