Candy bars

Making candybars for the kids. They taste just like the Lions Bars I remember from The Netherlands, but then without the funny ingredients and sugar overload. Healthy almost... 
Seriously: scrunched up rice wafers, rolled oats, chopped up nuts, peanut butter, maple syrup and melted dark chocolate. All mixed together and then just letting it set in the fridge.
Very easy to make, but they come with a warning: highly addictive!

Healthy Lion Bars:
Adapted recipe from Chickslovefood.com

- 6 rice wafers (or 12 thins)
- 70 grams rolled oats
- 100 grams of chopped mixed nuts 
- 6 tablespoons of peanut butter (or any other nut butter)
- 4 tablespoons of maple syrup (or honey)
- 120 grams of dark (70%) chocolate

Scrunch up the rice wafers, then mix with the oats and the nuts. Warm up the peanut butter with maple syrup in a bowl of hot water (or use a microwave), then add to the dry mixture and stir through. Melt the chocolate, once again in a bowl over hot water (or use the microwave), before adding it to the mix. Line a rectangular baking dish or container with baking paper. Spoon in the mixture and press down gently. Put in the fridge until set, then cut in bars.

I keep mine in the fridge, keeps them crunchy for longer.
